We’ve all heard how breakfast is the most important meal of the day. With school starting up again we are going to have to find new and delicious ways to get our kids the nutrients they need to start their days off right. Thankfully, there are easy recipes that you can bake the night before and your child will have a yummy breakfast on the go for the next week.

Wake-Up Bars

Here is what you need:

1/3 cup Peanut Butter

1/3 cup Brown Sugar

2 ½ Tbs Butter

1 Egg

½ tsp Vanilla Extract

1 Ripe banana, mashed

2/3 cup Rolled Oats

1/3 cup All-Purpose Flour

2 Tbs ground flax-seed

¼ tsp Baking Soda

*If your child is allergic to peanuts any alternative nut/nut-free spread can be substituted
*1/2 cup Unsweetened Applesauce can be used in place of 1 Ripe Banana

Directions

  1. Preheat oven to 350 degrees F . Grease a 9×9-inch baking pan.
  2. In a mixing bowl, beat together the peanut butter, brown sugar, and butter with an electric mixer until smooth and fluffy. Beat in the egg and vanilla extract, then the banana. Stir in the oats, flour, wheat germ, and baking soda until completely combined. Spread in prepared baking pan.
  3. Bake in the preheated oven until set and lightly browned, 20 to 25 minutes. Remove from oven and cool in pan on wire rack before cutting into bars.

Good Morning Granola Bars

Here is what you need:

2 Cups Rolled Oats

¾ Cup Brown Sugar

½ Cup Ground Flax Seed

¾ tsp Ground Cinnamon

1 Cup All-Purpose Flour

¾ tsp Salt

½ Cup Honey

1 Egg, beaten

½ Cup Vegetable Oil

2 tsp Vanilla Extract

¾ Cup Dried Fruit (raisins, cherries, apricots, ect.)

Directions

  1. Preheat the oven to 350 degrees F. Generously grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
  3. Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.
